The objective of this guide is to offer general recommendations for the improvement of basic infrastructure and hygienic-sanitary conditions in traditional markets so that national and local authorities have guidance and a reference point to build safe food markets. The guide includes a series of recommendations for traders, intermediaries, administrators, and consumers, all of whom play a fundamental role in the proper functioning of these markets.
