Abstract
[Introducción] La producción de alimentos saludables puede enfocarse desde varios puntos de vista, que abarcan un conjunto de acciones y procedimientos que se adoptan en la cadena de producción para controlar los peligros inherentes al proceso: bien la producción, o bien las medidas de gestión que toman las agencias gubernamentales. El documento presenta un enfoque institucional, desde la óptica de la salud, aun entendiendo que muchos desafíos deben superarse en la formulación y aplicación de las medidas de gestión.
 
[Introduction] Healthy food production can be viewed from several different perspectives, adopting an array of actions and procedures in the chain of production to control the dangers inherent to the process – a look into the production, or contemplating the management measures adopted by government agencies. This document takes an institutional approach, from a health perspective, understanding that many challenges must be overcome during the formulation and implementation of management measures.
 
[Introdução] A produção de alimentos saudáveis pode ser vista sob vários aspectos, incorporando um conjunto de ações e procedimentos adotados na cadeia produtiva para controlar os perigos inerentes ao processo – um olhar sob a produção, ou contemplando as medidas de gestão adotadas no âmbito das agências governamentais. O documento traz uma abordagem institucional, sob a ótica da saúde, entendendo que muitos desafios devem ser superados durante a formulação e implementação das medidas de gestão.
