Recognition of the direct link between food safety and human health prompted the Member Governments of the Pan America Health Organization (PAHO) to select "Sanitary Control of Food" as the topic of their Technical Discussions, held during the XXVIII Meeting of the PAHO Directing Council (1981). The substance of those discussions and the Governing Body reolution resulting from them are the subject of this publication. The topic selected for these Technical Discussions provides Member Governments an opportunity for identifying program components which accelerate the promotion, planning, coordination, and development of food sanitation services. This report outlines the current situation and offers a number of strategy considerations which, if implemented, may help to reduce the hazards associated with food in each phase from production to consumption Directing Council Meeting, 18.
